With the nickname Cupcake, I had to go here. These are fun to make and fun to eat!

Ingredients

Meat Loaves

3 lbs. ground sirloin, beef or turkey
1 cup oatmeal
1 cup ketchup
2 eggs
Shredded Parmesan cheese to taste
3 tbsp. of your favorite Rub or divide into several bowls and make different “flavors”. We use Black Dog Belly Rub™, Red Dog Rub™, Awesome Antler Rub™, Wow-A Chihuahua™, Rowdy Kitty Rub™.

Frosting

Mashed potatoes – use any recipe. I use a shortcut and buy a few containers of Bob Evans ready-made.

Food coloring

Garnishes – I use cherry tomatoes, finely chopped sautéed peppers (red, yellow and orange), shredded parmesan, chopped herbs, thin sliced onions caramelized, sautéed carrots shaved with a potato peeler. Get creative:-)

Instructions

Preheat Oven to 350º
Mix the meat loaf ingredients in a large bowl or if you are using different spices split into several bowls.

Form mixture into a cupcake shapes and place in greased cupcake pan. I use one that holds 12 normal size cup cakes and this recipe filled it perfectly.
Bake at 350° for about 25 minutes.
Remove and cool for 10 minutes.
While cooking, prepare the toppings. While meat loaves are cooling, mix the mashed potatoes with food coloring in several bowls. Frost, decorate and serve warm. If you want you can heat for a few minutes in the oven at 300°.
