Sometimes I amaze myself and come up with a recipe that turns out REALLY GOOD! FANTASTIC actually. My friend brought over fresh, 3-hour old walleye. So, I made a salsa of chopped bananas, finely chopped pineapple tidbits, jalapeño, shredded unsweetened coconut, a good dash of Mom’s Golden MoJo and a little lime juice. Then I pan-fried the Walleye (seasoned with our Wow-A Chihuahua) in a little butter and EVOO. I broke my rule of don’t mix the spices! Served the fish with the salsa on the side.

This was fabulous. Definitely a repeat performer with any delicate white fish.
Excellent recipe. The ingredients perfectly compliment this delicate but flavorful fish. One for the books, and worthy of competition. A guaranteed gold medal winner.
