This is a cost-effective dish that tastes great. Perfect for a crowd with a side salad.
1 box low-carb penne pasta
1 large box of mushrooms sliced and sauteed – we used Costco organic mushrooms because they taste great!
1 large jar of plain marinara sauce
1 teaspoon Ciao Down
1 large box of baby spinach
16 oz. shredded mozzarella
Pre-heat oven to 350. Cook pasta according to directions. Pour a little pasta sauce in the bottom of 9 x 12 glass dish. Pour pasta into the glass dish and pour the remaining marinara sauce on top and stir a little to mix. Add baby spinach and Ciao Down seasoning. Add sauteed mushrooms and top with mozzarella cheese and bake for 45 minutes cover. Remove foil and bake for another 10 minutes until cheese starts to brown. Let sit for 10 minutes and serve.
