These are absolutely delicious.
2 tablespoons EVOO
8 – small flat corn taco shells
4 cups of chopped Kale
1 box cherry tomatoes sliced in half
1 cup dried cranberries – soaked in warm water for 15 minutes then drained
1 medium onion chopped
2 cloves garlic
2 teaspoons of Wow-A chihuahua (or more depending on your heat preference)
2 cups shredded Cotija cheese
Add Kale, garlic, cranberries and cherry tomatoes and saute’ until heated through.
Add Wow-A Chihuahua and stir. Warm tacos in the microwave and fill with divided mixture.
Sprinkle Cotija cheeses on the inside and fold over.
Sprinkle a little more Cotija cheese on the top side and warm in a 350 oven for 8 minutes.
