Mom's Amazing Fried Chicken Salad

The combination of fried chicken with our Black Dog Belly Rub in the light and crispy bread crumbs paired with crumbled blue cheese, roasted beets over crisp, mixed greens and a drizzle of honey mustard dressing is sublime.

Ingredients
  

  • 1 box Pre-washed crisp lettuce (romaine, etc.)
  • 1 tbsp Fresh thyme leaves
  • 1 tbsp Black Dog Belly Rub
  • 1/2 cup Panko
  • 1/2 cup All purposed flour
  • 1 cup Buttermilk
  • 1 package Chicken tenders
  • Olive oil
  • 1 box or can Roasted or cooked beets, chopped into bite-sized chunks.
  • Crumbled blue cheese to your liking
  • Honey mustard dressing

Instructions
 

  • Rinse chicken and pat dry with a paper towel. Place in a bowl and pour buttermilk over the chicken.
    Let sit for 30 minutes to an hour.
  • Mix flour, bread crumbs, Black Dog Belly Rub, and fresh thyme in a shallow dish and mix well.
  • Take chicken tenders and, dredge in bread crumbs and let sit for a few minutes.
  • Heat olive oil in a frying pan. When heated, fry the chicken tenders until golden brown.
  • Place on parchment and keep in a warm oven.
  • Assemble salads. Place lettuce on a plate or large bowl. Add chopped beets, crumbled blue cheese, chicken, and then drizzle with honey mustard.
  • Serve warm and devour!
