- Rinse chicken and pat dry with a paper towel. Place in a bowl and pour buttermilk over the chicken. Let sit for 30 minutes to an hour.
- Mix flour, bread crumbs, Black Dog Belly Rub, and fresh thyme in a shallow dish and mix well.
- Take chicken tenders and, dredge in bread crumbs and let sit for a few minutes.
- Heat olive oil in a frying pan. When heated, fry the chicken tenders until golden brown.
- Place on parchment and keep in a warm oven.
- Assemble salads. Place lettuce on a plate or large bowl. Add chopped beets, crumbled blue cheese, chicken, and then drizzle with honey mustard.
- Serve warm and devour!
