This is a healthy, hearty and EASY one-pot meal.

1 pound organic turkey sausage, pork sausage sliced or for a vegetarian option, use 2 boxes of baby Bella mushrooms cut in half

2 tablespoons EVOO

1 large sweet onion chopped

3 cloves of garlic

1 bunch of Chopped Kale – rinse before chopping

1 can of Cannellini, Navy or Great White Northern Beans -drained and rinsed

1 28 oz can of diced tomatoes or 2 14 oz. cans of stewed tomatoes Italian Style

1/2 cup water

2 Tablespoons Black Dog Belly Rub

Serve with a French Baguette that has been sliced and spread with soft butter mixed with a crushed garlic clove and warmed in the oven until golden brown. If you happen to have Gallopin’ Gourmet Shake, put some of that in the garlic butter mixture. Yumsville!

 

In a large saucepot heat EVOO, add turkey sausage and then onion.  When the onion is translucent add garlic, tomatoes, beans,

Black Dog Belly Rub and water. Cook for 5 minutes and then add kale. Simmer for 10 minutes and serve in bowls with warm French bread.
