With a hint of the southwest, these crackers provide a nice little bite. Perfect for enjoying with a cold beer or glass of whine. Great to put out for guests.
3/4 cup dried Craisens chopped – soaked in hot water until hydrated – place on a paper towel
3/4 cup chopped toasted pecans
2 sticks of butter – softened
1 tablespoon Wow-A Chihuahua
2 cups unbleached all purpose flour
1/2 cup grated sharp cheddar cheese
1/2 teaspoon sea salt
Parchment paper for baking
Mix butter, cheese, together until smooth. Add flour gradually. Add salt, pecans and craisens. Mix until blended. Divide dough into two and roll into 8″ logs. Wrap in plastic for 8 hours and/or up to 3 days.
Preheat oven to 350. Place Parchment paper on cookie sheets and slice the logs into 1/4″ slices and bake for 8 to 12 minutes until wafers are golden brown. Place on cooling rack and cool completely.
