Roasted Heirloom Carrots with Spiced Apple Cider Glaze
A great side dish that isn't too sweet.
Ingredients
- 2/3 cup apple cider
- 2 Tbsp olive oil
- 2 Tbsp course-grain mustard
- 2 Tbsp Maple syrup or honey
- 1/4 tsp sea salt
- 4 tbsp Unsalted butter, browned in a pan
- 2 to 3 pounds heirloom carrots, the multi-colored ones - cut into bite-sized sticks
- 1 Tbsp Awesome Antler rub
- 2 Tbsp Whole grain mustard
- Fresh thyme leaves to garnish
Instructions
- Preheat oven to 375. Line a roasting pan with aluminum foil or parchment paper
- In a saucepan, reduce apple cider to a syrup consistency and then set aside. Add mustard, brown butter, and maple syrup.
- ln a bowl, add olive oil, Awesome Antler rub, and carrots. Toss to coat.
- Transfer the carrots to the roasting pan; spread carrots a single layer, and roast for about 30 to 40 minutes. Stir a few times every so often so they roast evenly.
- Drizzle the glaze over carrots and roast for another 15 to 20 minutes.
