2 Cornish game hen or 8 Quail
1/2 cup dark beer
1/2 cup gluten-free soy sauce
2 tablespoons dark molasses
zest of 1 lemon
zest of 1 orange
1 Tablespoon Far Out Feather Dust
1/4 cup fresh grated ginger or prepared minced ginger – I always keep a jar handy of the Ginger People minced ginger
2 cloves minced garlic
Mix all ingredients up to the game hens in a glass bowl and then pour into a gallon freezer bag. Rinse game hens in cold water and pat dry. Cut game hens in half and place in zip lock bag and marinate for 1 to 2 hours. I put the bag in a dish in the event it leaks. Turn once.
Remove hens from marinade and grill over medium heat for 7 to 8 minutes each side or until done. Brush with marinade. They may get a little burned looking but are delicious.
Serve with Corn pudding!
