Flower Power adds great dimension to mashed potatoes or cauliflower. When I’m really tired after a day of work, sometimes I use Bob Evans. Or the frozen ones work too. But most of the time I make them from scratch. Use red skin or Yukon Gold for the best flavor. Depending on how many for dinner or if you want leftovers, i use the ratio of one large potato or two small potatoes per person.

Ingredients:

6 large Red skin or Yukon Gold potatoes

1/2 stick of butter

1 cup half & half

1 teaspoon Flower Power

Pepper to taste

I scrub and leave on skins but you can peel if you’d like. Chop into chunks and put in a pan, cover with water add a teaspoon of salt. Boil until they are fork soft. Drain and mash with a hand masher, add butter and mash in. Then use a mixer and slowly add half & half and seasonings.  Don’t over mix and add half & half if needed.
