Another gem from my friend Kim. A great summer salad that has nothing that will spoil in the heat at a Q. Add more or less of the Wow-A Chihuahua depending on your desired level of heat.
Costa Maya Corn and Black Bean Salsa
Ingredients
- 5 cups corn – fresh off the cob or frozen will work. Thaw before adding
- 3 cans black beans drained and rinsed well
- 3 med onions chopped
- 3 sweet peppers red, yellow or orange, or combination, chopped
- 3 or 4 jalapenos chopped, to taste
- Dressing:
- 1 cup olive oil
- 1/2 c cider vinegar
- 1/4 c honey
- 3 to 3-1/2 T Wow-A- Chihuahua
Instructions
- Mix ingredients together and toss with beans, onions, corn and peppers. You can add a variation of this by squeezing a little fresh lime juice in the dressing too
