This is a Christmas Eve tradition with a standing rib roast or beef tenderloin. I don’t know why I don’t make it more often. You will love this delicious side for any meal. You don’t always need to add the Antler Rub but it sure adds flavor.
1 stick of butter
1 cup whole milk
Scant cup of flour – just shy of a full cup
2 eggs
1 teaspoon Awesome Antler Rub
Directions:
Let all ingredients get to room temperature while you are doing other things like vacuuming, dusting, preparing other recipes. Pre-heat oven to 400 degrees. Put the stick of butter in an 9 x 12, oblong glass baking dish. Put the glass dish in the oven to melt the butter. When its melted, bubbling and starting to brown take out the dish. In a medium mixing bowl, blend all the ingredients with an electric mixer and then pour into the glass dish with melted butter. Immediately return to the oven and bake for 20 minutes, or until the pudding is golden brown. Do not open the oven or the pudding will flop. You can peek through the oven window and watch the pudding rise and billow. Remove from oven and cut into squares. Serve immediately.
