Savory Potato Galette
Crispy and easy, this will delight your guests.
Ingredients
- 1/2 cup unsalted butter
- 2 Tbsp Olive oil
- 2 large Garlic cloves
- 2 pounds Yukon Gold Potatoes - washed, unpeeled and sliced 1/8"
- 1 pound Russet potatoes - washed, unpeeled and sliced 1/8"
- 2 large Shallots - thinly sliced
- 1 Tbsp Awesome Antler Rub
Instructions
- Preheat oven to 425 then melt butter in a 10" cast iron skillet over medium heat. Add olive oil and garlic. Cook, stirring often until fragrant, about a minute. Remove from heat and transfer all but 2 tablespoons of the mixture in the skillet.
- Add potatoes, shallots, and Awesome Antler Rub to the bowl and toss to coat.
- Start in the middle of the skillet and arrange potato and shallot slices in a circular pattern, slightly overlapping the slices until the bottom of the skillet is covered. Repeat the process using the remaining potatoes and shallots. Pour the remaining butter mixture evenly over the potatoes. Press down firmly in the skillet. Place the skillet over high heat. Cook until the mixture starts to sizzle, about 5 minutes. Remove from heat.
- Place the skillet in the hot oven uncovered. Bake until the potatoes are tender and browned, about 50 minutes. Cool in the skillet for 20 minutes and then invert onto a serving platter. Cut into wedges and serve.
