This fast and easy finger food is a really cost-effective way to please guests. If you’re entertaining a smaller group (or just yourself), dial back portions accordingly.
Ingredients
1 package flour tortillas
1 8 oz. package of softened cream cheese – low fat
8 oz. sour cream – low fat
1 cup Craisens soaked in warm water, OJ, or apple juice – I use warm water to keep the sugar down
2# sliced Black Forest ham (not shaved)
1-1/2 tablespoons Awesome Antler Rub

Directions
When Craisens are soaked and soft, drain well and coarsely chop. Mix with cream cheese, sour cream and Awesome Antler Rub.
Take a piece of plastic wrap that fits the size of the tortilla and place a tortilla on the plastic wrap.
Spread about 2 tablespoons of the mixture on a tortilla and spread up to the bottom, left and right edges. Don’t spread all the way to the top since as you roll the tortilla, the mixture will spread. If your tortillas are the big ones, you might need to use more filling. It should cover the tortilla, but not be thick.
Take two slices of Black forest ham and place them on the right and left side of the tortilla so they butt up at the bottom of the tortilla. You want even coverage but not at the very top.
Starting at the bottom, start to roll the tortilla like a cigar. You want it to be tight enough so the center doesn’t have a hole but not so tight you start pushing the cream cheese.
When finished use the plastic wrap to wrap the roll and put in the refrigerator for a few hours or overnight is even better.
When ready to serve, use a searatted knife and cut the funky ends off and enjoy them. I cut the wheels about 3/4″ thick and place on a serving platter. When you are ready to put out for guests, take the shaker jar of Awesome Antler rub and shake a little over the wheels for a pretty garnish.
