Spicy Cheddar and Ramp Biscuits

Ingredients
  

  • 2 C all purpose flour
  • 2-1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1/3 C grated butter
  • 1 tbsp Wow-a Chihuahua seasoning
  • 1/2 C extra sharp cheddar cheese, cut in small cubes
  • 1/2 C finely chopped wild ramps
  • 1 C whole milk

Method
 

  1. Preheat oven to 425
  2. In a mixing bowl add all dry ingredients. Then add butter, cheddar cheese and ramps. Mix until the mixture looks like a course meal with pea size lumps throughout.
  3. Gradually add milk and mix until dough pulls away from the sides of the bowl. It will be sticky and look somewhat dry.
  4. Ine a cookie sheet with parchment paper and using a medium-sized spoon, scoop the dough and drop onto the cookie sheet. Bake for 12 to 14 minutes. I usually go the 14 minutes because I like them a little browned on top.

A great way to use the wild ramps in your woods.

Be sure to thoroughly wash the ramps and remove the outer skin and roots.
