Coco's Fruit Salsa
A delightful and healthy snack served with spiced cinnamon chips. And, you can mix up your fruit too! Blueberries, raspberries, honeydew. This recipe was our favorite combination.
Ingredients
- 1 cup diced watermelon
- 1/2 cup diced canteloupe
- 1/2 cup diced granny smith apple
- 3/4 cup Sliced strawberries
- 1/2 cup diced Kiwi
- 2 tbsp Apricot or strawberry preserves
- 1 tbsp Fresh lemon juice and a little zest
- Spray coconut or avocado oil
- 10" flour tortillas
- Yellow Dog Sweet Shake
- Optional Thinly sliced mint leaves
Instructions
- Using a glass bowl, mix fruit lemon juice and 1 teaspoon of Yellow Dog Sweet Shake together with apricot preserves. Chill in refrigerator.
- Preheat oven to 375. Spray both sides of the flour tortilla with oil. Stack four or 5 tortillas and cut them like a pie into triangles.
- Spread out in one layer on a parchment-lined cookie sheet. Spray one more time with oil and then shake on Yellow Dog Sweet Shake.
- Bake until slightly brown, about 8 minutes. Cool and store in an airtight container for a week.
