This is easy and wonderful during cold weather.
1 Beef Chuck or English Roast – preferably grass-fed
1 Tablespoon Black Dog Belly Rub
3 to 4 Carrots
1 Bag frozen Pearl Onios or if you have time buy fresh and peel them
1 Bag frozen Peas – steam them at the end and serve on the side
1 cup Port wine
1 Tablespoon EVOO
Cooked Polenta or Mashed potatoes

Preheat oven to 350.Brush roast with EVOO and rub on Black Dog Belly Rub both sides.
Place in a dutch oven and roast for 20 minutes uncovered. Pour port wine over the roast and scatter the pearl onions around and then put cover on. Roast for 1 hour and 15 minutes then add carrots and roast for 45 minutes.

Serve over Mashed potatoes or cooked Polenta.
