4 Russet Potatoes – grated with large holes on box grater – good workout for the biceps
1 large sweet onion – cut in half and grate that too
3 green onions – finely chopped
2 eggs
1 teaspoon baking powder – yes powder
1/4 cup plain bread crumbs
1 teaspoon either Black Dog Belly Rub or Gallopin’ Gourmet Shake
1/2 teaspoon Real Salt
EVOO for pan frying
1 Tablespoon butter

Put the shredded potatoes and onion in a clean kitchen towel and wring out as much moisture as possible. In a bowl, mix together eggs, green onion, and dry ingredients. Fold in potatoes and sweet onion. Mix gently.
Heat oil and butter over medium-high (add enough to cover the bottom of the pan but not too deep).
Drop large spoonful of potato mixture into pan and cook each side until good and brown. you can see the edges of the potatoes. Flip and cook the other side until brown. Drain on paper towel and then place on the rack and keep warm a 250 oven.
