Loaded Potato Bites

Ingredients
  

  • 2 # pounds small fingerling blue, or redskin potatoes
  • Extra virgin olive oil
  • ½ cup sour cream
  • 5 strips of bacon cooked crisp and crumbled
  • 1- Tablespoon Awesome Antler Rub

Method
 

  1. Preheat oven to 375
  2. Mix Awesome Antler Rub into sour cream and let meld
  3. Scrub potatoes well.
  4. Rub extra virgin olive oil on skins
  5. Bake at 375 degrees until fork tender –about 30 minutes.
  6. Let cool to handle.
  7. Cut potatoes into 1” rounds, cut off ends so the rounds can sit upright.
  8. Scoop a little potato out of the tops
  9. Shake on Antler rub
  10. Combine sour cream with Awesome Antler Rub and spoon onto the tops of the potatoes
  11. Top with bacon bits
