This recipe reminds me of my friend’s Golden Retriever, Pixie. She was sweet, talented and learned fast. This chicken salad will surprise you with the complexity of flavor, yet so delicious and easy to prepare.

1 whole Chicken Breast, halved and poached or grilled
2 stalks celery finely chopped
1/4 Mayo or to you consistently
1 tablespoon Red Dog Rub

Chopped chicken once cooled and mix together with celery, mayo and Red Dog. Serve over lettuce, or as a sandwich on nice, whole grain bread. I use this to demo and put a dollop of chicken salad on a cherry tomato that has been sliced in halve.
