Grilled Chicken with Bourbon Peaches

This is a delightful dish that is simple to make. If peaches are not in season, you can buy sliced canned peaches.

Ingredients
  

  • 2 Boneless chicken breasts
  • Bumpa's Bourbon Rub
  • Extra virgin olive oil - mild
  • 1 can Sliced peaches or 2 ripe peaches
  • 2 tbsp Maple syrup
  • 1/8 cup Bourbon
  • 2 tbsp Butter

Instructions
 

  • Rinse chicken, pat dry, and place in a 2" deep glass dish. Season generously with Bumpa's Bourbon Rub and then drizzle with olive oil. Be sure to turn so the chicken is coated. Let sit for 30 minutes before grilling.
  • Heat the grill to medium-high and place the chicken on the grill to sear for about 4 to 5 minutes. Reduce the heat to medium and grill chicken for 5 minutes and then flip. Bring heat back up to medium-high for about 5 minutes and then lower to medium and grill the chicken until juices run clear.
  • Melt the butter in a large skillet. Drain the peaches and place them in the skillet. Stir in the maple syrup and bourbon. Saute over medium heat until the peaches become caramelized. Keep warm until ready to serve.
  • Serve the chicken breasts over arugula with peaches on the side.
