Coco's Fruit Salsa

A delightful and healthy snack served with spiced cinnamon chips. And, you can mix up your fruit too! Blueberries, raspberries, honeydew. This recipe was our favorite combination.

Ingredients
  

  • 1 cup diced watermelon
  • 1/2 cup diced canteloupe
  • 1/2 cup diced granny smith apple
  • 3/4 cup Sliced strawberries
  • 1/2 cup diced Kiwi
  • 2 tbsp Apricot or strawberry preserves
  • 1 tbsp Fresh lemon juice and a little zest
  • Spray coconut or avocado oil
  • 10" flour tortillas
  • Yellow Dog Sweet Shake
  • Optional Thinly sliced mint leaves

Instructions
 

  • Using a glass bowl, mix fruit lemon juice and 1 teaspoon of Yellow Dog Sweet Shake together with apricot preserves. Chill in refrigerator.
  • Preheat oven to 375. Spray both sides of the flour tortilla with oil. Stack four or 5 tortillas and cut them like a pie into triangles.
  • Spread out in one layer on a parchment-lined cookie sheet. Spray one more time with oil and then shake on Yellow Dog Sweet Shake.
  • Bake until slightly brown, about 8 minutes. Cool and store in an airtight container for a week.
