Perfect Pork Tenderloin w/Mashed Sweet Potatoes
pork tenderloin - rinsed in cold water and pat dry
Sweet potatoes - roasted and mashed with a little butter and milk or coconut milk
Rub pork with a little EVOO and then shake on Flower Power. Let sit room temperature for 10 minutes.
Grill at medium-high for about 13 minutes each side until juices run clear. Let sit for 5 minutes and then slice and serve over warm, mashed Sweets potatoes. OMG. So good!
